Lazy Wives Hot Pickled Peppers

Pickling can be an easy and rewarding way to fill your pantry full of your garden goodies. Hot peppers are always a favorite and not difficult to prepare. What ever your choice forpeppers from mild to extreme hot these ten steps will provide an easy way to preserve for future use.

 

Ingredients

Brine
1 qt. Water (4 cups)
1 qt. Vinegar (4 cups)
1 clove garlic
1 head dill
pinch of salt

Pickling Solution
1 gallon water
1 cup salt
1 cup vinegar
1 clove garlic
1 grape leaf
1 bunch dill
Bring to boil and pour over peppers and seal

Ten Easy Steps

Step 1: Thoroughly wash peppers.

Step 2: Make a small slit in each pepper in two or more places.

Step 3: Put peppers in a brine solution.

Step 4: Weigh down peppers under brine using a plate or pot lid.

Step 5: Next day drain well and pack peppers in jars.

Step 6: Heat lids and rings in hot tap water.

Step 7: Place filled jars in pressure cooker bath for approximately 10 minutes.

Step 8: Press spoon or knife in jar to remove any air that may be trapped between peppers.

Step 9: Remove jars from bath and place warmed lids and rings on the jars.

Step 10: Place jars in a cool place for storage.

If solution in jar stays clear they will be good to eat.

If solution in jar becomes cloudy do not eat.

Mild:

  • Anaheims
  • Poblanos

Hot:

  • Green Chilies
  • Jalapenos
  • Red Fresnos
  • Yellow Wax, or Guero
  • Green and Red Cayennes

Firehouse Hot:

  • Habaneros

 

 

End product should appear clear and crisp through jar.
